Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Oil

  • 2 tablespoons olive oil

Dairy & Broth

  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 clove garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper

Potatoes

  • 4 large potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons butter

Carrots

  • 1 pound baby carrots
  • 2 tablespoons brown sugar
  • 1 tablespoon butter for glazing

Garnish

  • to taste fresh parsley

Instructions 

  • Cook chicken in olive oil until golden and cooked through, then set aside.
  • Sauté garlic, add broth, cream, herbs, and simmer with chicken for 5 minutes.
  • Boil potatoes until tender, then mash with milk and butter, season to taste.
  • Simmer carrots in water, add brown sugar and butter, cook until glazed.
  • Serve chicken with mashed potatoes and glazed carrots, garnished with parsley.

Notes

For extra flavor, sprinkle fresh herbs over the dish before serving.
