Ingredients

Protein

  • 1 pound boneless, skinless chicken breasts

Oil

  • 1 tablespoon olive oil

Canned Goods

  • 1 can diced green chilies (4 oz)

Dairy

  • 1 cup heavy cream
  • 1 cup chicken broth

Spices

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Salt and Pepper

Cheese

  • 1 cup shredded cheddar cheese

Garnish

  • as needed fresh cilantro for garnish

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Season chicken with spices, cook 6-7 mins per side until cooked through.
  • Remove chicken, add broth, cream, and chilies; simmer 5 mins.
  • Return chicken, spoon sauce over, sprinkle cheese, cover, and cook 3-5 mins until melted.
  • Garnish with cilantro before serving.
