This Creamy Lemon Orzo with Chicken is a quick and easy weeknight meal. The bright lemon flavor and creamy sauce make it a family favorite.

  • 1.5 lb boneless, skinless chicken breast (cut into bite-sized pieces)
  • 1 Tbsp extra-virgin olive oil
  • 0.5 yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 cups chicken broth
  • 1 cup orzo pasta, dry
  • 2 cups baby spinach
  • 0.25 cup Greek yogurt
  • 0.5 cup grated parmesan cheese
  • 2-4 Tbsp lemon juice
  • 1 tsp lemon zest

Instructions 

  • Cut the chicken into bite-sized pieces. Dice the onion and mince the garlic.
  • Heat a large skillet over medium heat. Add the olive oil and saute the onion for 3-4 minutes until translucent.
  • Add the chicken, garlic, and seasonings. Cook for 3-4 minutes on one side, flip and cook another 3-4 minutes until fully cooked.
  • Add the orzo pasta and chicken broth. Bring to a boil, then lower heat, cover, and simmer for 12 minutes, stirring occasionally.
  • Remove the lid and simmer another 2-4 minutes uncovered until orzo is cooked.
  • Stir in the spinach until it wilts. Turn off heat and stir in the Greek yogurt, parmesan, lemon juice, and lemon zest. Season with salt as needed.

Notes

Add a pinch of red pepper flakes for a little heat.
