Instructions
Cut the chicken into bite-sized pieces. Dice the onion and mince the garlic.
Heat a large skillet over medium heat. Add the olive oil and saute the onion for 3-4 minutes until translucent.
Add the chicken, garlic, and seasonings. Cook for 3-4 minutes on one side, flip and cook another 3-4 minutes until fully cooked.
Add the orzo pasta and chicken broth. Bring to a boil, then lower heat, cover, and simmer for 12 minutes, stirring occasionally.
Remove the lid and simmer another 2-4 minutes uncovered until orzo is cooked.
Stir in the spinach until it wilts. Turn off heat and stir in the Greek yogurt, parmesan, lemon juice, and lemon zest. Season with salt as needed.
Notes
Add a pinch of red pepper flakes for a little heat.
