A delicious and hearty vegetarian dish featuring baked sweet potatoes filled with a creamy mushroom and spinach mixture, perfect for a comforting meal.
Ingredients
Sweet Potatoes
4largesweet potatoes
1tablespoonolive oil
1smallonion, chopped
2clovesgarlic, minced
8ozmushrooms, sliced
2cupsfresh spinach, chopped
1/2cupcream cheese
1/4cupgrated parmesan cheese
salt and pepper to tastesalt and pepper(to taste)
optionalchopped fresh parsleyparsley for garnish(for garnish)
Instructions
Preheat oven to 400°F (200°C). Pierce sweet potatoes and bake for 45-50 minutes.
Cook onion in olive oil until translucent, then add garlic and mushrooms; cook until browned.
Add spinach and cook until wilted. Scoop out sweet potato flesh and mash with cream cheese and Parmesan.
Mix mushroom-spinach mixture into mashed sweet potatoes, season with salt and pepper.
Stuff the mixture into halved sweet potatoes, bake for 10 minutes, then garnish with parsley if desired.
