Ingredients

Gnocchi

  • 16 oz gnocchi
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika

Instructions 

  • Cook gnocchi according to package instructions. Drain and set aside.
  • Heat olive oil in a skillet, sauté garlic for 1 minute.
  • Add mushrooms and cook until golden, then stir in spinach until wilted.
  • Pour in heavy cream, add smoked paprika, salt, and pepper; simmer for 3-4 minutes.
  • Add cooked gnocchi, toss to coat, then serve topped with Parmesan and parsley if desired.
