A delicious and comforting dish featuring tender gnocchi in a flavorful creamy sauce with spinach, mushrooms, garlic, and smoked paprika.

Ingredients

Gnocchi

  • 16 oz potato gnocchi
  • 2 cups fresh spinach, chopped
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • for garnish parmesan cheese (optional)

Instructions 

  • Cook gnocchi according to package; drain and set aside.
  • Sauté mushrooms in olive oil until browned, about 5 minutes.
  • Add garlic; cook 1 minute until fragrant.
  • Stir in spinach; cook until wilted, about 2 minutes.
  • Pour in cream, add paprika; simmer 3-4 minutes until thickened. Season with salt and pepper.
  • Add gnocchi to sauce; toss and serve with Parmesan if desired.

Notes

For extra flavor, sprinkle with fresh herbs or additional Parmesan.
