Instructions
Soak diced red onion in cold water.
Peel and dice potatoes into 1/2-inch cubes.
Boil potatoes in salted water until tender.
Drain potatoes, sprinkle with vinegar, and cool.
Mix vegan mayo, mustard, vinegar, celery seed, garlic powder, and salt.
Drain onions, add to dressing with relish/celery if desired.
