A comforting and nutritious soup packed with fresh vegetables and a touch of creaminess. Perfect for a cozy meal!
Ingredients
Vegetables

olive oil

onion, chopped

carrots, chopped
2
celery stalks, chopped
2
cloves
garlic, minced
Broth & Cream

vegetable broth

cup
chopped potatoes
1
cup
chopped zucchini
1/2
cup
frozen peas
1/2
cup
heavy cream
Seasoning
Salt and pepper to taste
Optional: fresh parsley for garnish
Instructions
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
Add garlic and cook for 1 minute more.
Pour in vegetable broth and bring to a boil.
Add potatoes and zucchini and simmer until tender, about 10-15 minutes.
Stir in frozen peas and cook for 2 minutes.
Remove from heat and stir in heavy cream.
Season with salt and pepper to taste.
Garnish with fresh parsley, if desired, and serve.
Notes
For a vegan option, substitute the heavy cream with coconut cream or cashew cream.
