Ingredients

Potatoes

  • 2 lbs small potatoes (such as Yukon Gold or red potatoes, quartered)

Dressing

  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice

Garnish

  • 1 tablespoon chopped fresh dill
  • 1/4 cup chopped red onion
  • 2 hard-boiled eggs (Optional, chopped)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss potatoes with olive oil, salt, and pepper.
  • Spread potatoes on a baking sheet.
  • Roast for 30-40 minutes, flipping halfway.
  • Whisk mayonnaise, Dijon mustard, and lemon juice.
  • Let potatoes cool slightly.
  • Combine potatoes, dressing, dill, and red onion.
  • Add chopped hard-boiled eggs, if desired.
  • Serve warm or cold.

Notes

For extra flavor, add a pinch of garlic powder to the potatoes before roasting.
