Ingredients

Potatoes

  • 4 large potatoes (peeled and cut into chunks)
  • 3 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 2 sprigs fresh rosemary (chopped)
  • to taste salt and pepper

Instructions 

  • Preheat oven to 200°C (400°F).
  • Parboil potatoes in salted water for 5 minutes, then drain and dry.
  • Toss potatoes with olive oil, garlic, rosemary, salt, and pepper.
  • Spread on a baking sheet and roast for 45-50 minutes, turning halfway.
  • Serve hot, garnished with extra rosemary if desired.

Notes

For extra crispiness, increase roasting time slightly.
