Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 4 cups mixed vegetables (carrots, potatoes, green beans)
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 2 tablespoons olive oil

Instructions 

  • Heat olive oil in a skillet and sauté garlic and onion until translucent.
  • Place chicken breasts in the crockpot, then add vegetables on top.
  • Pour sautéed garlic and onion over the vegetables.
  • Mix chicken broth, thyme, rosemary, salt, and pepper; pour over contents.
  • Cover and cook on low for 6-8 hours or high for 4-5 hours until cooked through.
  • Serve warm and enjoy your cozy dinner!

Notes
