Ingredients

Protein

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup low-sodium chicken broth
  • 1 cup greek yogurt or light cream cheese
  • 1 cup shredded low-fat cheese
  • 1 piece bell pepper, chopped
  • 1 piece onion, chopped
  • to taste salt and pepper
  • for garnish fresh cilantro

Instructions 

  • Place chicken breasts in the crockpot, then add beans, corn, tomatoes, seasoning, broth, bell pepper, and onion.
  • Stir to combine and coat the chicken with seasoning, then cook on low for 6-7 hours.
  • Shred the chicken inside the crockpot, then stir in Greek yogurt or cream cheese until creamy.
  • Add shredded cheese, let melt, then season with salt and pepper. Serve garnished with cilantro.

Notes

For a creamier texture, use Greek yogurt; for a richer flavor, opt for light cream cheese.
