This flavorful crockpot dish combines tender chicken, potatoes, and a zesty lemon sauce for a perfect weeknight dinner.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 4 medium potatoes (diced)

Liquids

  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice

Flavorings & Seasonings

  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Garnish

  • fresh parsley for garnish

Instructions 

  • Mix chicken broth, lemon juice, garlic, oregano, salt, pepper, and olive oil.
  • Place diced potatoes in crockpot, then top with chicken breasts.
  • Pour lemon mixture over chicken and potatoes, then add lemon slices on top.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours until cooked through.
  • Garnish with fresh parsley before serving.

Notes

Use fresh lemon for the best flavor and adjust seasoning to taste.
