This flavorful crockpot lemon garlic chicken is a quick and easy meal perfect for busy days, offering tender, shredded chicken with bright citrus and herb flavors.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Liquid

  • 1/4 cup lemon juice
  • 1/4 cup chicken broth

Aromatics & Seasonings

  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Garnish

Instructions 

  • Mix lemon juice, garlic, oregano, thyme, salt, pepper, and chicken broth.
  • Sear chicken in olive oil until lightly browned, 2-3 minutes per side.
  • Place chicken in crockpot and pour lemon garlic mixture over it.
  • Cook on low for 6-7 hours or high for 3-4 hours until tender.
  • Shred chicken, mix with sauce, and serve garnished with parsley if desired.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
