This flavorful crockpot chicken recipe is packed with protein and low in carbs, perfect for a satisfying meal that comes together effortlessly.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup sun-dried tomatoes (packed in oil), chopped
  • 1 cup spinach, fresh
  • 1 teaspoon garlic powder
  • 1 teaspoon italian seasoning
  • to taste salt and pepper
  • 0.5 cup grated parmesan cheese
  • fresh basil for garnish

Instructions 

  • Place chicken breasts in the crockpot.
  • Mix chicken broth, heavy cream, sun-dried tomatoes, garlic powder, Italian seasoning, salt, and pepper; pour over chicken.
  • Cook on low for 6-7 hours or high for 3-4 hours until cooked through.
  • In the last 30 minutes, add spinach and sprinkle Parmesan cheese on top.
  • Garnish with fresh basil before serving.

Notes

For extra flavor, use fresh sun-dried tomatoes packed in oil and adjust salt to taste.
