Instructions
In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, diced avocado, and finely chopped red onion.
Add the chopped parsley to the bowl with the other ingredients.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Drizzle the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
Serve immediately or chill in the refrigerator for about 15 minutes before serving for enhanced flavors.
