Ingredients

  • 1 large cucumber (diced)
  • 2 cup cherry tomatoes (halved)
  • 1 ripe avocado (diced)
  • 1/4 red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, diced avocado, and finely chopped red onion.
  • Add the chopped parsley to the bowl with the other ingredients.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Drizzle the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  • Serve immediately or chill in the refrigerator for about 15 minutes before serving for enhanced flavors.

Notes
