A refreshing and light salad combining crisp cucumbers with creamy yogurt and fresh dill, perfect for a quick snack or side dish.

Ingredients

Vegetables

  • 2 pieces English cucumbers (Thinly sliced)
  • 1/2 cup Greek yogurt (or plain yogurt)
  • 2 tablespoons finely chopped fresh dill
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, minced
  • 1 half lemon lemon, zested and juiced (approx. 1 tablespoon lemon juice)
  • 1 teaspoon salt (or to taste)
  • to taste freshly ground pepper

Instructions 

  • Thinly slice the cucumbers.
  • Whisk together yogurt, dill, olive oil, garlic, lemon juice, salt, and pepper.
  • Combine cucumber slices with the dressing.
  • Serve immediately or chill for up to 30 minutes.

Notes

This salad is best enjoyed fresh but can be refrigerated for up to 30 minutes before serving.
