0.25cupfresh parsley
1tbsplime juice
2tspsalt
1tbspmustard
jalapeno(to taste (use 1/4 of a jalapeno for a small amount of spice up to the entire jalapeno, option to remove seeds to decrease the jalapeno flavor/heat as well, start with 1/4 and add more to your liking))
1tbspapple cider vinegar
0.25cupwater
Instructions
Blend all ingredients until combined. Add 2 tbsp water as needed for sour cream consistency.
Transfer to a jar and use as a dip or dressing.
Store leftovers in a covered jar for up to one week.
Notes
Adjust the amount of jalapeno to control the spice level. For a smoother dressing, ensure the silken tofu is well-drained.
