These delicious homemade nut bars combine crunchy nuts, rich dark chocolate, and a touch of sea salt for a perfect snack or treat.

Ingredients

Nut mixture

  • 2 1/2 cups unsalted nuts of choice (3/4 cup cashews, 3/4 cup peanuts, 1 cup almonds)
  • 1/2 cup puffed rice
  • 1/4 cup brown rice syrup
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon sea salt
  • 1 cup dark chocolate chips
  • 2 teaspoons coconut oil
  • Optional flaky salt for topping

Instructions 

  • Preheat oven to 160°C (325°F). Spread nuts on a sheet pan and bake 5-8 minutes.
  • Mix nuts and puffed rice. Microwave syrup, whisk in vanilla and salt, then combine with nut mixture.
  • Press mixture into an 8x8-inch pan lined with parchment. Bake for 18-20 minutes, cool, then cut into bars.
  • Melt chocolate and coconut oil in intervals. Dip bars in chocolate, drizzle tops, sprinkle flaky salt, then refrigerate until set.
