A hearty and healthy casserole combining tender chicken, cauliflower, broccoli, and cheesy goodness, baked to perfection.

Ingredients

Protein

  • 2 cups cooked chicken, shredded

Vegetables

  • 4 cups cauliflower florets
  • 1 cup broccoli florets

Dairy

  • 1 cup cheddar cheese, shredded
  • 1 cup cream cheese

Liquids & Seasonings

  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt & pepper
  • 1/4 cup green onions, chopped

Instructions 

  • Preheat oven to 375°F (190°C).
  • Steam cauliflower and broccoli until tender, about 5-7 minutes.
  • Mix cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper until smooth.
  • Combine shredded chicken, steamed vegetables, and shredded cheese in a baking dish. Pour sauce over and mix well.
  • Bake for 25-30 minutes until bubbly and golden. Garnish with chopped green onions before serving.

Notes

For extra flavor, add a pinch of paprika or your favorite herbs.
