  • 2 medium Eggplant (Choose globe or Italian varieties.)
  • 24 ounces Tomato Sauce (Opt for low-sodium or homemade.)
  • 15 ounces Ricotta Cheese (Can substitute with vegan ricotta.)
  • 8 ounces Mozzarella Cheese (Consider vegan mozzarella.)
  • 1 cup Parmesan Cheese (Look for vegetarian-friendly or use vegan Parmesan.)
  • 2 tablespoons Olive Oil (Feel free to use your favorite cooking oil.)
  • 2 teaspoons Herbs (Basil, Oregano) (Use fresh or dried.)

Instructions
