A flavorful and easy-to-make taco casserole cooked in the slow cooker, perfect for a family dinner or casual gathering.

Ingredients

Meat and Vegetables

  • 1 pound ground beef or turkey
  • 1 item onion, chopped
  • 2 cloves garlic, minced

Seasonings and Cans

  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies

Layers and Toppings

  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa

Optional Toppings

  • to taste sour cream, avocado, green onions, cilantro (for serving)

Instructions 

  • Brown the ground meat with onion and garlic in a skillet until cooked. Drain excess fat.
  • Transfer meat to slow cooker, add taco seasoning, beans, corn, and tomatoes. Stir to combine.
  • Layer half of crushed chips and cheese in the slow cooker, then pour salsa over.
  • Add remaining chips and cheese on top. Cover and cook on low for 4-6 hours.
  • Serve hot with optional toppings like sour cream, avocado, green onions, and cilantro.

Notes

For a spicier version, add hot sauce or extra chilies.
