A flavorful and easy-to-make dish featuring tender chicken served over jasmine rice with fresh vegetables and a savory sauce.

Ingredients

Protein

  • 1 pound chicken thighs, boneless and skinless

Grains

  • 1 cup jasmine rice

Liquids

  • 2 cups water
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon sesame oil

Vegetables

  • 1 carrot carrot, julienned
  • 1 cucumber cucumber, sliced
  • 2 green onions green onions, chopped

Garnish

  • sesame seeds sesame seeds for garnish

Instructions 

  • Mix soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil to make the marinade.
  • Add chicken to marinade and let sit for 30 minutes.
  • Cook rice according to package instructions.
  • Cook chicken in a skillet until fully cooked, then rest and slice.
  • Simmer remaining marinade to thicken.
  • Assemble bowls with rice, chicken, vegetables, and sauce. Garnish with green onions and sesame seeds.

Notes

For extra flavor, marinate chicken longer or add a dash of chili flakes for heat.
