Ingredients

Almond Brittle

  • 1/2 cup natural sliced almonds
  • 1/8 cup brown sugar
  • 1 tablespoon authentic maple syrup
  • 1 tablespoon water
  • 1 tablespoon coconut oil
  • Small pinch salt

Dressing

  • 1/2 cup extra virgin olive oil
  • 1/4 cup real maple syrup
  • 1/4 cup balsamic vinegar
  • 1 minced garlic clove
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • Small pinch white pepper

Salad

  • 2 tablespoons toasted sesame seeds
  • 1 tablespoon poppy seeds
  • 5 cups baby spinach leaves
  • 1 cup strawberries, sliced
  • 1 sliced avocado
  • 1/2 cup sliced green onions

Notes

For a sweeter salad, add a touch more maple syrup to the dressing. You can also substitute other berries for the strawberries.
