This creamy and flavorful dill potato salad is made with red potatoes, hard-boiled eggs, and a tangy dressing. It's the perfect side dish for any occasion!

  • 6 cups red potatoes (washed and cut into 1/2" pieces (about 8-10 potatoes))
  • 0.5 cup sour cream
  • 0.5 cup real mayonnaise
  • 0.5 cup white onion (diced)
  • 0.5 cup celery (diced)
  • 1 tablespoon apple cider vinegar
  • 4 hard-boiled eggs (peeled)
  • 0.25 teaspoon salt
  • Dash pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon dry dill weed

Instructions 

  • Boil potatoes until tender.
  • Drain and rinse with cold water.
  • Combine sour cream, mayonnaise, onion, celery, salt, pepper, mustard, and vinegar.
  • Dice eggs and add to potatoes.
  • Sprinkle with dill weed.
  • Add dressing and mix.
  • Refrigerate for at least one hour.
  • Serve cold.

Notes

For a tangier flavor, add a bit more apple cider vinegar.
