  • 2 pounds Yukon Gold potatoes (peeled and cut into 1-inch cubes)
  • 1 cup mayonnaise
  • 0.5 cup sour cream
  • 0.25 cup finely chopped celery
  • 0.25 cup finely chopped red onion
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions 

  • Place potatoes in a pot, cover with water, add salt.
  • Bring to a boil, simmer until fork-tender (10-15 minutes).
  • Drain potatoes and let cool completely.
  • Whisk together mayonnaise, sour cream, celery, red onion, dill, Dijon, vinegar, salt, and pepper.
  • Add cooled potatoes to the dressing.
  • Gently fold until evenly coated.
  • Refrigerate for at least 1 hour before serving.

Notes

For a tangier flavor, add a splash of lemon juice.
