A flavorful and easy-to-make dish combining tender roasted chicken thighs with a fresh lemon zucchini sauté, perfect for a quick weeknight dinner.
Ingredients

Instructions
Preheat oven to 400°F (200°C). Mix olive oil, soy sauce, vinegar, garlic powder, paprika, cumin, salt, and pepper.
Rub the mixture over chicken thighs and bake for 35-40 minutes until cooked through.
While baking, sauté sliced zucchinis in olive oil for 5 minutes, then add lemon zest and juice, cooking for 2 more minutes.
Let the chicken rest briefly, then serve with lemon zucchini, garnished with parsley.
