A flavorful and easy-to-make dish combining tender roasted chicken thighs with a fresh lemon zucchini sauté, perfect for a quick weeknight dinner.

Ingredients

Meat

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar (white or apple cider)
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • to taste salt and pepper
  • 2 medium zucchinis (sliced)
  • 1 lemon lemon (zest and juice)

Garnish

  • to taste fresh parsley (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C). Mix olive oil, soy sauce, vinegar, garlic powder, paprika, cumin, salt, and pepper.
  • Rub the mixture over chicken thighs and bake for 35-40 minutes until cooked through.
  • While baking, sauté sliced zucchinis in olive oil for 5 minutes, then add lemon zest and juice, cooking for 2 more minutes.
  • Let the chicken rest briefly, then serve with lemon zucchini, garnished with parsley.
