Ingredients

  • In a large bowl, combine the rice vinegar, soy sauce, sesame oil, sugar, grated ginger, minced garlic, and red pepper flakes (if using).
  • Whisk the dressing ingredients together until the sugar is dissolved.
  • Add the thinly sliced cucumbers to the bowl and toss to coat them evenly with the dressing.
  • Let the salad marinate for at least 10 minutes to enhance the flavors.
  • Before serving, stir in the chopped green onions and sprinkle with sesame seeds.

Notes

For extra crunch, you can add some sliced bell peppers or carrots.
