A refreshing and tangy cucumber salad with a delicious Asian-inspired dressing.
Ingredients

cucumbers
(thinly sliced)

rice vinegar

soy sauce

sesame oil

grated ginger

red pepper flakes

Instructions
In a large bowl, combine the rice vinegar, soy sauce, sesame oil, sugar, grated ginger, minced garlic, and red pepper flakes (if using).
Whisk the dressing ingredients together until the sugar is dissolved.
Add the thinly sliced cucumbers to the bowl and toss to coat them evenly with the dressing.
Let the salad marinate for at least 10 minutes to enhance the flavors.
Before serving, stir in the chopped green onions and sprinkle with sesame seeds.
Notes
For extra crunch, you can add some sliced bell peppers or carrots.
