A simple and healthy way to enjoy spaghetti squash baked to perfection, topped with fresh herbs and Parmesan cheese.

Ingredients

  • 1 medium spaghetti squash (about 2-3 pounds)
  • 2 tablespoons extra virgin olive oil
  • to taste none Salt and pepper
  • 2 cloves garlic (minced)
  • optional none Fresh herbs like parsley or basil (finely chopped)
  • optional none Grated Parmesan cheese (for serving)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Slice the squash in half, scoop out seeds, and brush with 1 tbsp olive oil. Season with salt, pepper, and garlic.
  • Place cut-side down on a baking sheet and bake for 40 minutes until flesh shreds easily.
  • Scrape flesh into noodles with a fork, toss with remaining olive oil, and garnish with herbs and Parmesan if desired.

Notes

For extra flavor, add a squeeze of lemon or red pepper flakes.
