These wholesome carrot cake oatmeal cookies are quick to make and perfect for a healthy snack or dessert.

Ingredients

Dry ingredients

  • 1 cup old-fashioned oats
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt

Sweeteners

  • 1/2 cup coconut sugar (or brown sugar)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup

Wet ingredients

  • 1 large egg
  • 1 tsp vanilla extract

Main ingredients

  • 1 cup grated carrots
  • 1/2 cup raisins or chopped walnuts (optional)

Instructions 

  • Preheat oven to 350°F (180°C) and line a baking sheet.
  • Mix dry ingredients in a large bowl.
  • Whisk wet ingredients in a separate bowl.
  • Combine wet and dry, then fold in carrots and optional nuts.
  • Drop spoonfuls onto baking sheet and bake 10-12 minutes.
  • Cool cookies before serving.
