These wholesome carrot cake oatmeal cookies are quick to make and perfect for a healthy snack or dessert.

Ingredients

Dry ingredients

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Wet ingredients

  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup raisins or chopped walnuts (optional) (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  • Mix dry ingredients in a large bowl; combine wet ingredients in another bowl.
  • Combine wet and dry mixtures; fold in carrots and optional nuts or raisins.
  • Drop spoonfuls onto baking sheet; flatten slightly.
  • Bake for 10-12 minutes; cool on wire rack.

Notes

For best results, use fresh grated carrots and adjust baking time as needed.
