These wholesome carrot cake oatmeal cookies are quick to make and perfect for a healthy snack or dessert.

Dry ingredients

Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
Mix dry ingredients in a large bowl; combine wet ingredients in another bowl.
Combine wet and dry mixtures; fold in carrots and optional nuts or raisins.
Drop spoonfuls onto baking sheet; flatten slightly.
Bake for 10-12 minutes; cool on wire rack.
