Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

Vegetables

  • 2 medium zucchinis (diced)
  • 1 medium onion (diced)

Other ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon smoked paprika (plus extra for garnish)
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon dried oregano
  • to taste salt and black pepper
  • 0.25 cup fresh cilantro or parsley (chopped)
  • 2 cups cooked rice (for serving)

Instructions 

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • Combine chicken, zucchini, and onion in a bowl. Drizzle with olive oil, add garlic and spices, then toss to coat.
  • Transfer mixture to the dish, spread evenly, and bake for 25-30 minutes until chicken reaches 165°F and vegetables are tender.
  • Optional: broil for 2-3 minutes for a golden finish. Garnish with herbs and extra paprika.
  • Serve over rice, sprinkled with fresh herbs.

Notes

Let the dish rest for a few minutes before serving to allow flavors to meld.
