A refreshing and creamy salad made with cucumbers, tomatoes, and a yogurt dressing.

Ingredients

  • 2 medium cucumbers (diced)
  • 2 medium tomatoes (diced)
  • 1/2 red onion (thinly sliced)
  • 1 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • salt (to taste)
  • pepper (to taste)
  • Fresh dill or parsley (for garnish (optional))

Instructions 

  • In a large bowl, combine the diced cucumbers, diced tomatoes, and sliced red onion.
  • In a separate bowl, whisk together the Greek yogurt, olive oil, lemon juice, garlic powder, salt, and pepper until smooth and creamy.
  • Pour the creamy dressing over the cucumber and tomato mixture, and toss gently to coat all the vegetables evenly.
  • Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice as desired.
  • Let the salad sit for about 10 minutes to allow the flavors to meld.
  • Garnish with fresh dill or parsley before serving, if desired.

Notes

This salad can be made ahead of time and stored in the refrigerator for a few hours before serving.
