Ingredients

medium tomatoes

red onion
(thinly sliced)

plain Greek yogurt

Instructions
In a large bowl, combine the diced cucumbers, diced tomatoes, and sliced red onion.
In a separate bowl, whisk together the Greek yogurt, olive oil, lemon juice, garlic powder, salt, and pepper until smooth and creamy.
Pour the creamy dressing over the cucumber and tomato mixture, and toss gently to coat all the vegetables evenly.
Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice as desired.
Let the salad sit for about 10 minutes to allow the flavors to meld.
Garnish with fresh dill or parsley before serving, if desired.
Notes
This salad can be made ahead of time and stored in the refrigerator for a few hours before serving.
