Ingredients

olive oil

  • 1 tablespoon olive oil

ground beef or Italian sausage

  • 1 pound ground beef or Italian sausage

onion

  • 1 medium onion (diced)

garlic

  • 3 cloves garlic (minced)

crushed tomatoes

  • 1 28 ounces crushed tomatoes

broth

  • 4 cups chicken or vegetable broth

dried oregano

  • 2 teaspoons dried oregano

dried basil

  • 1 teaspoon dried basil

red pepper flakes

  • 1/2 teaspoon red pepper flakes (optional)

lasagna noodles

  • 8 noodles lasagna noodles (broken into pieces)

ricotta cheese

  • 1 cup ricotta cheese

heavy cream

  • 1 cup heavy cream

shredded mozzarella cheese

  • 1 cup shredded mozzarella cheese

salt and pepper

  • to taste salt and pepper

fresh basil

  • for garnish fresh basil

Instructions 

  • Heat olive oil in a large pot, cook ground meat until browned.
  • Add diced onion and garlic; cook until softened. Pour in crushed tomatoes and broth, add herbs, and simmer.
  • Add broken noodles; cook until tender, about 10-12 minutes.
  • Stir in ricotta and heavy cream; heat through. Season with salt and pepper.
  • Serve hot, topped with mozzarella and fresh basil.

Notes

For a richer flavor, let the soup simmer longer to develop deeper taste.
