Ingredients

Salad Ingredients

  • 1 cup quinoa (cooked)
  • 1 cup frozen edamame (shelled and cooked)
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro

Dressing

  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or maple syrup (optional)
  • to taste Salt and pepper
  • 1/4 cup slivered almonds or sesame seeds (for crunch)

Instructions 

  • Cook quinoa according to package directions. Let cool.
  • Cook edamame according to package directions. Let cool.
  • Combine quinoa, edamame, cucumber, bell pepper, onion, and cilantro in a bowl.
  • Whisk together rice vinegar, soy sauce, sesame oil, and honey (if using).
  • Pour dressing over salad and toss.
  • Season with salt and pepper to taste.
  • Top with almonds or sesame seeds.
  • Serve immediately or chill.

Notes

For a spicier kick, add a pinch of red pepper flakes to the dressing.
