1cupquinoa(cooked)
1cupfrozen edamame(shelled and cooked)
1/2cupchopped cucumber
1/2cupchopped red bell pepper
1/4cupchopped red onion
1/4cupchopped cilantro
Dressing
2tablespoonsrice vinegar
1tablespoonsoy sauce
1tablespoonsesame oil
1teaspoonhoney or maple syrup(optional)
totasteSalt and pepper
1/4cupslivered almonds or sesame seeds(for crunch)
Instructions
Cook quinoa according to package directions. Let cool.
Cook edamame according to package directions. Let cool.
Combine quinoa, edamame, cucumber, bell pepper, onion, and cilantro in a bowl.
Whisk together rice vinegar, soy sauce, sesame oil, and honey (if using).
Pour dressing over salad and toss.
Season with salt and pepper to taste.
Top with almonds or sesame seeds.
