This creamy Green Goddess Dressing is packed with fresh herbs, avocado, and Greek yogurt. It's a healthy and flavorful addition to salads, dips, and more!

  • 1 medium avocado (((150g)))
  • 1 cup plain greek yogurt ((non-fat) (or yogurt of choice (228g)))
  • 1 cup fresh parsley (((25g)))
  • 0.5 cup fresh dill (loosely packed ())
  • 0.5 cup fresh mint (((12g)))
  • 1 cup baby spinach (((28g)))
  • 0.333 cup lemon juice (((80ml) about 1½ large lemons))
  • 2 Tbsp extra virgin olive oil (((30ml)))
  • 2 garlic cloves
  • 0.5 tsp salt (more to taste (3g))
  • black pepper (to taste)
  • 1-2 Tbsp water (optional to thin it out)

Instructions 

  • Slice avocado, remove skin and pit. Combine all ingredients in a blender or food processor. Blend until smooth, adding up to 1 Tbsp of cold water to thin if needed.
  • Taste and add more salt or lemon juice if desired.
  • Hint: For salad dressing, thin with cold water. For a thicker dip, no need to thin!

Notes

Adjust the consistency by adding more or less water to achieve your desired thickness.
