Vegetables

  • 4 medium zucchinis (Halved lengthwise and scooped out to create "boats")
  • 1 pound ground beef (Lean ground beef works best)
  • 1 small onion (Diced for added flavor)
  • 2 cloves garlic (Minced for aromatic taste)
  • 1 cup tomato sauce (Flavorful base for filling)
  • 1 cup shredded cheese (Mozzarella, cheddar, or parmesan)
  • 1 tablespoon olive oil (For sautéing)
  • 1 teaspoon Italian seasoning (Herb blend for flavor)
  • 0.5 teaspoon paprika (Adds smokiness)
  • to taste salt & pepper (Season to preference)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Sauté diced onions and minced garlic in olive oil until fragrant.
  • Add ground beef and season with Italian seasoning, paprika, salt, and pepper; cook until browned.
  • Mix in tomato sauce and cook for another 2 minutes.
  • Stuff the zucchini boats with the beef mixture, top with shredded cheese, and bake for 20 minutes.

Notes

For a vegetarian version, substitute the beef with lentils or mushrooms.
