Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper; roast for 25-30 mins.
Heat remaining 1 tbsp olive oil; cook seasoned chicken for 6-8 mins until cooked through.
Combine roasted sweet potatoes, cooked chicken, and chopped greens in a bowl.
Toss everything together; serve in bowls topped with sliced avocado and optional toppings.
