A quick, nutritious meal combining roasted sweet potatoes, seasoned chicken, and fresh greens, topped with creamy avocado.

Ingredients

Vegetables

  • 2 medium sweet potatoes (diced)
  • 1 pound chicken breast (diced)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 1 cup spinach or kale (chopped)
  • 1 avocado avocado (sliced)
  • optional toppings salsa, greek yogurt, or chopped herbs

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper; roast for 25-30 mins.
  • Heat remaining 1 tbsp olive oil; cook seasoned chicken for 6-8 mins until cooked through.
  • Combine roasted sweet potatoes, cooked chicken, and chopped greens in a bowl.
  • Toss everything together; serve in bowls topped with sliced avocado and optional toppings.
