This quick and flavorful Instant Pot lemon garlic chicken is perfect for a healthy weeknight dinner, packed with bright citrus and savory herbs.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon lemon, juiced and zested
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions 

  • Set Instant Pot to 'Sauté' and add olive oil. Sauté garlic for 1 minute.
  • Add chicken breasts, season with salt, pepper, and oregano. Pour in lemon juice, zest, and chicken broth.
  • Close lid and cook on high pressure for 10 minutes. Release pressure naturally for 5 minutes, then quick release.
  • Remove chicken, let rest for a few minutes, then garnish with parsley and serve.

Notes

For extra flavor, add a splash of white wine or a pinch of red pepper flakes.
