A refreshing and colorful pasta salad perfect for picnics and gatherings.

Ingredients

  • 8 ounce rotini or fusilli pasta
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1/2 cup red bell pepper (diced)
  • 1/2 cup black olives (sliced)
  • 1/2 cup mozzarella cheese (cubed)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh basil (chopped)
  • 1/2 cup Italian dressing
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool.
  • In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, black olives, mozzarella cheese, red onion, and fresh basil.
  • Pour the Italian dressing over the pasta salad and toss to combine.
  • Season with salt and pepper to taste.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

Feel free to add other vegetables or proteins to customize your salad.
