  • 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 pound pasta ((spaghetti, fettuccine, or penne))
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 0.5 cup chicken broth
  • 0.25 cup lemon juice
  • 2 tablespoons butter
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions 

  • Cook pasta according to package directions, reserving 1/2 cup pasta water.
  • Cook chicken in olive oil until browned and cooked through.
  • Add garlic and cook until fragrant (about 30 seconds).
  • Pour in chicken broth and lemon juice; simmer to reduce slightly.
  • Stir in butter and Parmesan until melted and smooth.
  • Add pasta to skillet and toss to coat.
  • Add pasta water if sauce is too thick.
  • Season with salt and pepper to taste.
  • Garnish with parsley and lemon zest (optional).
  • Serve immediately.

Notes

Adjust the amount of lemon juice to your preference for a tangier flavor.
