Instructions
Boil potatoes until tender, about 10-15 minutes. Drain and cool.
Combine mayonnaise, mustard, celery, onion, pickle relish, salt, and pepper in a bowl.
Add potatoes and eggs (if using) to the bowl and mix gently.
Refrigerate for at least 2 hours before serving.
Notes
For a tangier flavor, add a tablespoon of vinegar.
