  • 1 head garlic (whole head)
  • 2 tablespoons olive oil (divided)
  • 1 medium onion (chopped)
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream
  • to taste salt and pepper
  • optional fresh herbs for garnish

Instructions 

  • Preheat oven to 400°F (200°C). Wrap garlic in foil and roast for 40 minutes.
  • Cook chopped onion in 1 tablespoon olive oil until translucent.
  • Extract roasted garlic and add to the onions, then pour in broth and simmer for 10 minutes.
  • Blend the soup until smooth, then stir in milk or cream, season, and heat through.
  • Serve hot, garnished with fresh herbs if desired.
