This easy roasted potato salad is a delicious twist on a classic side dish. Roasting the potatoes brings out their natural sweetness and creates a wonderfully textured salad.

Ingredients

Potatoes

  • 2 lbs small red potatoes (quartered)

Dressing

  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 2 tablespoons red grape juice vinegar

Add-ins

  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss potatoes with olive oil, salt, and pepper.
  • Spread potatoes on a baking sheet.
  • Roast for 25-30 minutes, flipping halfway.
  • Whisk mayonnaise, mustard, and vinegar in a bowl.
  • Add potatoes, red onion, and parsley to dressing and toss.
  • Serve warm or chilled.

Notes

For extra flavor, add some crumbled bacon or chopped celery.
