Instructions
Preheat oven to 425°F (220°C).
Peel and cut sweet potatoes into 1-inch cubes.
Toss cubes with olive oil, salt, pepper, cinnamon, and brown sugar.
Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
Sprinkle with fresh herbs before serving, if desired.
