Ingredients

Sweet Potatoes

  • 2 large sweet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cinnamon
  • 2 tablespoons brown sugar ((optional))
  • 1 tablespoon fresh rosemary or thyme ((optional))

Instructions 

  • Preheat oven to 425°F (220°C).
  • Peel and cut sweet potatoes into 1-inch cubes.
  • Toss cubes with olive oil, salt, pepper, cinnamon, and brown sugar.
  • Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
  • Sprinkle with fresh herbs before serving, if desired.

Notes
