This classic potato salad is easy to make and perfect for any occasion. Creamy, tangy, and full of flavor, it's a guaranteed crowd-pleaser!

  • 2 pounds Yukon gold potatoes (peeled and cubed)
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup sweet pickle relish
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • 2 hard-boiled eggs (peeled and chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika (optional, for garnish)

Instructions 

  • Boil potatoes until tender, about 12-15 minutes. Drain and cool.
  • Combine mayonnaise, mustard, pickle relish, celery, and red onion in a bowl.
  • Fold in potatoes and eggs.
  • Season with salt and pepper.
  • Refrigerate for at least 2 hours.
  • Garnish with paprika, if desired.

Notes

For a tangier flavor, add a tablespoon of apple cider vinegar.
