Ingredients

Protein

  • 1 pound boneless, skinless chicken thighs
  • 1 can (15 oz) pumpkin puree
  • 2 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme
  • 1 cup green beans, trimmed and cut
  • 1 tablespoon olive oil

Instructions 

  • Heat olive oil in a skillet and brown chicken thighs for 5 minutes.
  • Combine pumpkin, broth, vegetables, onion, garlic, and spices in the slow cooker.
  • Place browned chicken on top and cook on low for 6-7 hours.
  • Add green beans 30 minutes before serving, then shred chicken and stir into stew.

Notes

For extra flavor, garnish with fresh herbs before serving.
