A delicious and healthy vegetarian dish featuring jumbo pasta shells filled with ricotta and spinach, baked to perfection.

Ingredients

Pasta

  • 12 pieces jumbo pasta shells
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated parmesan cheese
  • 1 cup marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1/2 cup shredded mozzarella cheese
  • optional fresh basil for garnish

Instructions 

  • Preheat oven to 375°F (190°C). Cook shells until al dente, then drain.
  • Mix ricotta, spinach, Parmesan, garlic powder, onion powder, salt, and pepper.
  • Spread marinara sauce in a baking dish. Stuff shells with mixture and place in dish.
  • Pour remaining sauce over shells, sprinkle with mozzarella, cover, and bake 25 minutes. Uncover and bake 10 more minutes.
  • Garnish with basil if desired and serve warm.

Notes

For a creamier filling, add a beaten egg to the ricotta mixture.
