A delicious and healthy vegetarian dish featuring jumbo pasta shells filled with spinach and ricotta, baked to perfection with marinara sauce.

Ingredients

Pasta

  • 12 pieces jumbo pasta shells
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated parmesan cheese
  • 1 egg egg
  • 1 teaspoon garlic powder
  • 1 teaspoon italian seasoning
  • to taste salt and pepper
  • 2 cups marinara sauce

Instructions 

  • Preheat oven to 375°F (190°C). Cook shells until al dente, then drain.
  • Mix spinach, ricotta, 1/2 cup mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
  • Spread 1 cup marinara in a baking dish. Stuff shells with filling and place in dish.
  • Pour remaining marinara over shells, sprinkle with remaining mozzarella, cover, and bake 25 minutes.
  • Remove foil, bake 10 more minutes until bubbly and golden. Serve warm.

Notes

You can add extra spinach for more greens or top with fresh basil for added flavor.
