Ingredients

Grains

  • 1 cup brown rice
  • 2 cups low-sodium chicken broth

Protein

  • 1 pound boneless, skinless chicken breasts, diced

Canned Goods

  • 1 can (15 oz) black beans, rinsed and drained

Vegetables

  • 1 cup corn (fresh, frozen, or canned)
  • 1 medium red bell pepper, diced

Other

  • 1 teaspoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • to taste salt and pepper
  • 1 avocado sliced
  • fresh cilantro, chopped for garnish

Instructions 

  • Combine rice and chicken broth, bring to a boil, then simmer for 45 minutes until tender.
  • Cook diced chicken with olive oil and spices until browned, about 6-8 minutes.
  • Add bell pepper and corn, cook for 3-4 minutes until tender.
  • Mix cooked rice, chicken, and black beans in a bowl. Top with avocado, cilantro, and lime wedges.
